Last week San Elijo Hills community invited us up to view the new Lennar Sub division Terraza. They also threw a Killer Cupcake Challenge for us!
They were whimsical and fun. Not only did they spell out SDMOMfia and use our logo, they also had all the buildings from the main street in San Elijo Hills.
Beautiful, elegant, grownup cupcakes. These are the exact words I used to describe Cups to my husband. Loved them.
Both were amazing! You can’t go wrong with either bakery.

Not only did the Bakeries compete, but so did our Moms!!! Heather from Baby, Bump & Beyond, LLC won a gift certificate to The Spa at La Costa.
Here’s Heathers winner recipe. Oh, and when you meet her, make sure you ask her about exploding chocolate.
CHEESECAKE CUPCAKES
Graham cracker crust mix
CHEESECAKE:
24 oz. cream cheese
1 c. sugar
1 tsp. vanilla
5 eggs
TOPPING:
1 1/2 c. sour cream
3/4 c. sugar
1/2 tsp. vanilla
Make graham cracker crust and pack down in bottom of cupcake liners.
Cream together cream cheese, sugar and vanilla. Add eggs one at a time. Spoon into cupcake liners until almost full. Bake 30 minutes at 300 degrees. Remove from oven, cool 5 minutes.
Mix topping ingredients. Fill indentation in cupcakes and smooth on top. Return to oven for 5 minutes. Remove from oven and cool.
Makes 2 dozen regular size cupcakes. May want to serve with cherries, strawberries or blueberries on top.
